Wild Mushroom & Herb Appetizer
HEAT oven to 425ºF. Place sheet of foil on bottom of oven to catch any cheese drips.
HEAT large skillet over medium heat. Add 2 tablespoons of the olive oil and mushrooms; saute 4 to 5 minutes, stirring occasionally. Stir in garlic and herbs; continue cooking 1 minute. Stir in sherry; remove from heat.
ARRANGE pita breads on large cutting board; brush remaining 1 tablespoon of the olive oil on surfaces. Top evenly with cheese and mushrooms mixture.
CAREFULLY slide pitas directly onto middle rack of oven; bake 6 to 7 minutes or until light golden brown and cheese is melted. Cut each into 6 wedges to serve.
Prepare with Fontina cheese.
