Sesame-Noodle Veggie Salad

  1. MIX soy sauce, vinegar, sesame oil, brown sugar, garlic, ginger, and crushed red pepper flakes in small bowl; set aside.
  2. COOK soba noodles according to package directions; drain.
  3. PLACE vegetables in large bowl. Add noodles, dressing, cilantro, and peanuts; toss to mix well. Serve immediately.
Fresh Tips

Add shredded rotisserie chicken or cubes of firm tofu.

To seed a cucumber, cut in half lengthwise. Use a spoon (preferably a grapefruit spoon) to scoop out seeds down the center.

Use toasted slivered almonds for peanuts.
Use spaghetti for soba noodles.
