Quesadillas are perfect for an easy weeknight dinner, or for a weekend party. Serve as a “Quesadilla Bar” with bowls of guacamole, salsa, lime wedges, and/or sour cream. Use whichever veggies in the ingredient list you prefer.
Black Bean-Veggie Quesadillas
Vegetarian, Soy Free, Nut Free
HEAT grill pan or skillet over medium heat. Coat with cooking spray or brush with oil.
PLACE 1/4 cup of cheese on one side of each tortilla; top evenly with beans, corn, tomato, green onion, cilantro, and remaining 1/4 cup of cheese. Fold in half.
COOK 3 to 4 minutes or until golden underneath; carefully flip. Continue cooking 3 to 4 minutes. Cut into wedges; serve with guacamole, salsa, lime wedges and/or sour cream, if desired.
To use corn tortillas, place ingredients on one tortilla. Top with second tortilla and cook until golden on both sides; cut into wedges.
Add chopped jalapeño pepper before cooking.
