MIX peanut butter, honey and vanilla in large bowl. Stir in remaining ingredients.
FORM into 1-inch balls; place in air-tight container. Note: If mixture becomes sticky, you can refrigerate for 20 minutes before shaping for easier handling.
STORE in freezer.
Use a 1-inch scoop to easily shape balls.
To cut into squares, press mixture into greased 8x8-inch pan.
Experiment with adding any of the following in small amounts: dried cranberries, chopped dried cherries or apricots, chopped walnuts, crisp rice cereal, toasted coconut, sunflower seeds, or ground cinnamon.
