Lemon Barley Salad with Toasted Walnuts

Have you tried barley? It has a nutty flavor and chewy consistency. Barley is an excellent whole grain source of fiber, vitamins and minerals, and promotes heart health. Keep some extra cooked barley in the refrigerator to toss into any green salad or soup. (Check out my Slow Cooker Split Pea Barley Soup!)

Lemon Barley Salad with Toasted Walnuts
Vegetarian, Vegan, Wheat Free, Dairy Free, Soy Free
Instructions
  1. COOK barley according to package directions; drain any liquid and cool. (Should give about 4 cups cooked.)
  2. PLACE barley in large bowl with walnuts and parsley.
  3. MIX olive oil, lemon juice and zest, garlic and seasoning in small bowl. Pour into large bowl; toss well. Season with additional salt and pepper, if desired.
