Make it meat-free tonight! Garbanzo beans, which are a legume, are a great source of dietary protein and fiber. This one-dish dinner is perfect for any weeknight, or double the ingredients and serve to weekend guests.

  1. PLACE garbanzo beans, onion, garlic, and seasoning in food processor; pulse until finely chopped, scraping bowl if necessary. Add flour and parsley; pulse just until mixture holds together. Shape mixture into 6 balls; flatten into patties.
  2. REMOVE 1/2 tsp. zest from lemon; place in small bowl with yogurt and cucumber. Cut half of lemon into wedges; set aside. Add juice from remaining half to bowl and mix well.
  3. ADD olive oil to medium skillet; heat over medium heat. Add patties; cook about 3 minutes on each side, or until golden brown and heated through.
  4. PLACE greens in serving bowls; add tomato and falafel. Serve with lemon wedges, pita bread, and yogurt mixture.
Fresh Tips


Falafel patties can be made up to one day in advance and refrigerated in an air-tight container before cooking. Add one or two minutes to cook time.
