Food is medicine! Curry powder is a popular spice mix that offers a number of health benefits, including the prevention of cancer, protection against heart disease, reduce Alzheimer’s disease symptoms, ease pain and inflammation, boost bone health, protect the immune system, and increase the liver’s ability to remove toxin’s from the body. But if you are not a curry powder fan, experiment with other spices. There is still a whole lot of nutrition in this hearty recipe!

Curried Lentils & Carrots
Vegetarian, Vegan, Wheat Free, Gluten Free, Dairy Free, Soy Free, Nut Free
  1. HEAT oil in large saucepan over medium-low heat. Add onions and carrots; cook 8 to 10 minutes or until onions are tender, stirring occasionally. Add garlic; cook 1 minute.
  2. NOTE: If you want the tomatoes to be less chunky, place in food processor with liquid and pulse. Add tomatoes, lentils, broth, curry powder, thyme, salt and pepper to pan; bring to a boil, breaking up any large tomatoes with wooden spoon if not pulsed. Cover; simmer about 45 minutes or until lentils are tender.
  3. REMOVE from heat; let stand for 10 minutes. Stir in vinegar. Note: Add additional broth as desired for thinner consistency.
Fresh Tips


Prepare with chicken broth.


Leftovers last for several days, or freeze for another time.
