Whether your corn is fresh off the cob or frozen and thawed, these fritters are easy to make and full of flavor.
Corn Fritters with Spiced Honey Mayo
Vegetarian, Dairy Free, Soy Free, Nut Free
MIX mayonnaise, honey and a few dashes of cayenne pepper. Cover; refrigerate until ready to serve.
PLACE ear of corn on end in large bowl; remove kernels with knife and repeat with remaining ears. Add egg, flour, cornmeal, milk, green onion, salt and few dashes cayenne pepper; stir to make a thick mixture.
HEAT oil in large skillet over medium-high heat. Carefully drop heaping 1/4 cupfuls of corn mixture into skillet; flatten slightly. Cook 1 to 2 minutes on each side or until golden brown. Serve warm with Spiced Honey Mayo.
Use 2 cups frozen and thawed corn kernels for fresh.
Use dairy milk for almond or soy milk.
