Chipotle Cheddar Grilled Cheese on Sourdough

SPREAD chipotle pepper with sauce over two bread slices; top evenly with cheese and remaining bread.
SPREAD outsides of sandwiches with butter.
COOK in skillet over medium heat 2 to 3 minutes; flip and continue cooking 2 minutes or until light golden brown on both sides.
Canned chipotle pepper can be found in most grocery stores. It is dried, smoked jalapeño pepper, and the adobo sauce is a tangy red sauce. You can use just the chiles for intense smoky chile heat, or just the sauce if you want a sour-sweet flavor and slightly less fiery smoky heat. I freeze leftovers and use in dips, pasta, marinades, soups, etc.
