Chili-Stuffed Sweet Potato
Vegetarian, Wheat Free, Gluten Free, Soy Free, Nut Free
PREPARE Vegetarian Chili according to recipe.
PIERCE sweet potatoes several times with fork; place on microwave-safe plate. Microwave on HIGH 4 to 4-1/2 minutes or until tender, turning over half way.
CUT potatoes across top; split open. Spoon chili into potatoes; top with shredded cheese and sour cream.
Sprinkle with chopped green onion, cilantro or parsley.
