Black Bean-Veggie Burgers

Skip the expensive store-bought veggie burgers and make your own!  I have experimented with a lot of veggie burger ingredients, and this favorite combination holds together well and looks similar to a beef burger. Give it a try with your choice of toppers!

Black Bean-Veggie Burgers
Vegetarian, Nut Free, Soy Free
  1. HEAT oven to 450ºF.
  2. HEAT oil in medium skillet over medium heat several minutes. Add onion, mushroom, and carrot; cook 5 minutes, stirring occasionally. Add garlic; continue cooking 1 minute. Set aside to cool slightly.
  3. MASH just over half of the beans in medium bowl. Add remaining beans, bread crumbs, egg, ketchup, seasonings, and vegetable mixture. Shape into four patties; place on greased baking sheet.
  4. BAKE 14 minutes; top with cheese. Continue baking one minute or until cheese is melted. Serve burgers in buns; see Fresh Tip for serving suggestions.
Fresh Tips


Serve with any of the following: leaf lettuce, tomato slices, pickle slices, red onion slices, guacamole, caramelized onions, and/or condiments of choice.

Make a double batch and freeze some for later. Thaw before cooking.
