Got the lunch box blues?  You can make this the night before, but add the avocado before heading off to work.

Black Bean, Corn & Avocado Salad

  1. PLACE beans, corn, bell pepper, avocado, green onion and cilantro in large bowl; toss gently.
  2. ADD remaining ingredients; mix lightly.

Prepare extra corn on the cobb for dinner, and use leftover ears in this fresh and delicious salad.


Use 1 cup frozen or canned corn for fresh.


Double this recipe to easily prepare more servings.
