Avocado Smear with Poached Egg

  1. TOAST bread.
  2. MASH avocado lightly in small bowl; smear on toast.
  3. TOP with tomato slices and poached eggs; season with salt and pepper. Sprinkle with parsley and hot sauce, if desired.

To poach eggs, bring 1-1/2 inches of water barely to a simmer (190ºF if you have a thermometer) in a non-stick skillet or wide shallow pan. Add a few teaspoons of white vinegar to help coagulate the eggs - and no salt! Use fresh eggs for best results. (There is a three digit number on the carton representing the days of the year the eggs were packed and cloudy egg whites are the freshest.) Break the eggs first into a custard cup or metal measuring cup. When the water is ready, start a very gentle swirling motion with a wooden spoon. Carefully lower the custard cup into the water so a little hot water runs in and then tip the cup to let the egg out. Cook for about 3-1/2 minutes for medium doneness. Using a slotted spoon, carefully lift the egg out onto a paper towel-lined plate. You can trim away any uneven edges. Poached eggs can be held in cold water and refrigerated for hours. To reheat later, simply dip into simmering water. What a great make-ahead tip for entertaining!
