This creamy and flavorful alternative to macaroni and cheese is made with cashews and lots of veggies. Check out the Fresh Tip to sprinkle with fresh bread crumbs for a crunchy topping.

Vegan Mac No Cheese

  1. COOK pasta according to package directions, adding broccoli during last 3 minutes. Drain and return to pot; set aside.
  2. HEAT oven to 350ºF.
  3. MEANWHILE, place remaining ingredients in large pot; bring to a boil. Reduce heat; simmer 16 to 18 minutes or until vegetables are tender. Carefully pour mixture with liquid into blender; blend until smooth. (Do in two batches if using a small blender.) Pour sauce over pasta with broccoli; stir until evenly coated. Pour into 2-quart baking dish.
  4. BAKE 25 to 30 minutes or until thoroughly heated.
Fresh Tips

Sprinkle 1/4 cup fresh bread crumbs over pasta mixture before baking.
