Teriyaki Tofu Bowl

  1. HEAT large pot of water to a boil. Add soba noodles and green beans; cook 3 minutes. Drain; set aside.
  2. HEAT wok or large non-stick skillet several minutes over medium heat. Add oil, garlic and ginger; cook and stir 30 seconds. Add red pepper; cook 2 minutes, stirring occasionally. Add tofu; heat 1 to 2 minutes or until light golden brown, stirring occasionally. Reduce heat to medium-low; stir in teriyaki sauce and water. Add spinach; stir about 1 minute or until slightly wilted.
  3. ADD noodles and beans; toss lightly and continue cooking to heat thoroughly. Divide into bowls; sprinkle with cilantro.

Substitute coarsely chopped bok choy for spinach.
