This recipe actually goes together quickly and its all you need for a healthy, power meal. You can top it with sautéed shrimp, chicken, or tofu. See my Fresh Tip for a Vegan option.

Southwestern Quinoa Bowl

Instructions
  1. ARRANGE all salad ingredients in two serving bowls.
  2. ZEST about 1 teaspoon of lime peel in small bowl or container with lid. Add juice from lime and remaining vinaigrette ingredients. Whisk or cover bowl with lid and shake well. Drizzle over salads or serve on the side.

MAKE IT VEGAN

Omit cheese and substitute agave nectar for honey.

MAKE AHEAD

Lime Vinaigrette will hold for several days refrigerated in an air-tight container.
