Will you be looking up on Monday, August 21 when the Great American Eclipse sweeps across the U.S.? This is the one moment where the earth, moon, and sun are in a line. While you are watching the solar eclipse (with your protective viewing glasses on), you may as well enjoy some tasty cookies, too!

Instructions
  1. HEAT oven to 350ºF.
  2. BEAT sugar, butter and salt with electric mixer in large bowl. Add egg and vanilla; beat until fluffy. Mix flour and baking powder; beat in gradually.
  3. ROLL dough on floured board to about 1/8-inch thickness. Cut into circles using 2-inch biscuit cutter or top edge of glass.
  4. BAKE 10 to 12 minutes or until lightly browned around edges. Remove to rack; cool.
  5. MIX powdered sugar, cocoa powder and water. Spread on cookies to represent moon covering sun in different stages. Note: Add additional warm water, as needed.

HOW TO

This recipe makes an awesome sugar cookie. I like to add a teaspoon of grated lemon zest when blending dough. Cut into desired shapes. Omit chocolate glaze and frost with buttercream frosting.
