This cake is so moist and full of cinnamon flavor, you will become a fan of rhubarb. And rhubarb is known to improve digestion, stimulate bone growth, boost skin health, prevent cancer, improve circulation, and prevent neurological damage.

Instructions
  1. HEAT oven to 350ºF.
  2. BEAT 1/2 cup of the butter and the granulated sugar until well blended. Beat in egg and vanilla. Stir together flour, baking soda and salt in medium bowl. Add alternately to butter mixture with milk until well blended, scraping sides of bowl. Fold in rhubarb. Spread into greased 9x13-inch pan.
  3. BLEND remaining 1/4 cup of butter, brown sugar and cinnamon. (Fingers work well to thoroughly blend.) Sprinkle evenly over batter.
  4. BAKE 40 minutes or until pick inserted into center comes out clean.
