Making pancakes from scratch is easy and worth the few minutes of extra effort.
Pumpkin Spice Pancakes
Vegetarian, Soy Free, Nut Free
In large bowl, stir together milk, pumpkin, egg, and oil until blended. Mix dry ingredients in medium bowl; add to wet ingredients and mix just until blended.
Heat lightly oiled skillet or griddle over medium high heat. Add a heaping 1/3 cup of batter for each pancake, smoothing into a circle. Cook several minutes or until light golden brown underneath; flip. Continue cooking until cooked through.
Serve immediately with syrup and butter.
Make your own Pumpkin Pie Spice: Mix 1-1/2 Tbsp. ground cinnamon, 1 tsp. each ground ginger and nutmeg, and 1/2 tsp. each ground allspice and cloves. Makes 2-1/2 tablespoons.
When cooking for a crowd, use a full can of pumpkin and double the recipe.
