What? A pink latte? And this contains no coffee. The ingredient giving the beautiful color (plus antioxidant and anti-inflammatory properties) is beets.

  1. PLACE 1-1/2 cups of the milk in blender with beets, agave nectar and spices; blend until smooth.
  2. POUR through strainer into medium saucepan. Heat to a simmer, stirring occasionally. Remove from heat; stir in vanilla.
  3. HEAT remaining milk; whisk until frothy. Pour beet mixture into two cups; top with frothed milk.

HOW TO STEAM BEETS

Trim and rinse beets, leaving skin on. Cut into quarters and place in a pot on stove (fitted with steamer basket if you have one). Add about 2 inches of water and bring to a boil. Cook 15 to 20 minutes or until tender. Cool; peel with a paring knife. Cooked beets can be held in the refrigerator for 3 to 4 days.

SUBSTITUTE

Use honey for agave nectar.
