Thai cuisine is one of my favorites to eat and cook because of the interesting depth of flavors. And it is no more difficult to master than any other type of cuisine, once you have several key ingredients on hand. Thanks to on-line websites and grocery stores with increasingly well-stocked international sections, ingredients are more accessible than ever. You can easily make restaurant-style meals at home!

Pad Thai Noodles

  1. PLACE the rice noodles in water for about 3 hours before cooking, to soften.
  2. HEAT wok or large skillet over medium-high heat. Add oil, shrimp, and garlic. Push to one side and add egg to other side. Let cook about 30 seconds before stirring to set egg slightly. Cook and stir just until shrimp and eggs are cooked, stirring occasionally. Reduce heat to medium.
  3. DRAIN noodles, reserving 1/3 cup of the water. Add noodles and green onions to wok; stir fry until noodles are softened and translucent, adding 4 to 5 tablespoons of water as needed to prevent sticking. When noodles are soft, add fish sauce, sugar, ketchup and paprika; toss well to combine and heat thoroughly.
  4. TRANSFER to serving platter; sprinkle with peanuts and cilantro, and garnish with lime wedges.
Fresh Tips


I love to add a few dashes of crushed red pepper flakes with the garlic.
