One-Dish Chicken & Potatoes

  1. HEAT oven to 400ºF.
  2. PLACE potatoes, onion and garlic in medium bowl. Add 1 tablespoon of the olive oil, salt, 1/2 teaspoon of the thyme, and the pepper; mix well to coat. Spread into 9x13-inch baking dish.
  3. PLACE chicken on top (trim excess fat, if necessary); brush with remaining 1 tablespoon olive oil. Sprinkle with remaining 1/2 teaspoon thyme and season with additional salt and pepper.
  4. BAKE 50 to 55 minutes or until chicken reaches 165ºF and vegetables are tender.
Fresh Tips

It is key to use bone-in, skin-on chicken breasts (not boneless skinless) to prevent overcooking and to get moist, flavorful chicken.

Use small new potatoes for fingerling.
