There are endless combinations of healthy and delicious entree salads. Here is my spin on a traditional Nicoise Salad – it’s perfect for a weeknight dinner or special enough to double and impress weekend guests.

Nicoise Salad with Honey-Mustard Dressing

Instructions
  1. COOK potatoes about 15 minutes in boiling water or until tender. Drain and cool.
  2. COOK green beans in boiling water about 4 minutes or until crisp-tender. Drain and cool.
  3. MIX oil, vinegar, mustard, honey, and pepper.
  4. PLACE greens on platter; arrange clusters of potatoes, beans, tuna, egg, tomato, and olives. Drizzle dressing over ingredients or serve on the side.
Fresh Tips

DOUBLE UP
This beautiful salad is perfect for guests with little fuss. Simply double all ingredients to serve four and arrange on a large platter.

SUBSTITUTE
Use 1 cup cherry or grape tomato halves.
