Mushroom Barley Soup

  1. HEAT broth, barley, carrots, and sage in large pot to a boil over medium-high heat. Reduce heat; simmer 40 minutes.
  2. MEANWHILE, heat oil in large skillet over medium-low heat. Add onion; cook 10 minutes, stirring occasionally. Add mushrooms; increase heat to medium-high. Cook and stir 5 minutes. Reduce heat to low; add garlic and cook 2 minutes.
  3. STIR mushroom mixture into broth; season with salt and pepper. Simmer, partially covered, for 10 minutes. Stir in parsley before serving.
