This easy recipe is full of flavor and made with ground turkey. Kick up the heat even more and add a chopped serrano or jalapeño chili pepper with the tomato sauce.

Layered Enchilada Pie

  1. HEAT skillet over medium-high heat. Add oil and onion. Reduce heat to medium; cook about 5 minutes, stirring occasionally. Add turkey; cook 5 to 7 minutes or until cooked through, stirring to break up pieces. Add tomato sauce and seasonings; continue cooking 2 minutes. Remove from heat.
  2. HEAT oven to 350ºF.
  3. GREASE 9-inch pie plate or round 2-quart baking dish. Spread 1/4 cup of meat mixture onto bottom. Press one tortilla into pie plate and top evenly with about 2/3 cup meat mixture and about 1/3 cup cheese. Repeat with 3 more layers. Carefully pour 1/4 cup water around edges of tortillas inside pie plate.
  4. BAKE 28 to 30 minutes or until thoroughly heated and cheese is melted. Sprinkle with tomato, avocado, and cilantro; cut into wedges to serve.
