Kettle Corn with Coconut Oil

When you need a change from the ordinary, this popcorn is delicious! The coconut oil gives it a clean flavor and crisp texture. You won’t believe how easy it is to make, and it may just remind you of going to the state fair. (NOTE: Previously, I posted this recipe with double the quantity. However, I have reduced it by half because I think the end result tastes best in small batches, and there is less likelihood of burning.)

  1. MELT coconut oil over medium heat in large pot.
  2. ADD sugar, salt and popcorn kernels; cover and shake. When kernels begin to pop, continue shaking pot to avoid burning.
  3. WHEN popping slows to 2 to 3 seconds, remove from heat and uncover. Cool.
Fresh Tips

Use canola oil for coconut oil.

This is traditional for sweetness of kettle corn, but you can reduce the sugar slightly if you prefer.
