Instructions
  1. HEAT oil in medium-large skillet over medium heat. Add corn and red pepper; cook 5-7 minutes or until tender, stirring occasionally.
  2. STIR in quinoa, seasoning, beans, 1/4 cup of the cheese and cilantro; heat thoroughly.
  3. SPOON into two bowls; top with remaining cheese, avocado and lime wedges.

SERVING SUGGESTION

Serve with warm tortillas and salsa.

KICK UP THE HEAT

Add a small chopped jalapeño pepper with the corn and red pepper.
