WHISK flour, sugar, baking powder, baking soda and salt in large bowl.
WHISK egg and melted butter in medium bowl. Stir vinegar into milk; blend into egg mixture. Make a well in center of dry ingredients; pour milk mixture into well and whisk gently just until blended. Do not overmix. Let batter stand 5 to 10 minutes.
HEAT a non-stick skillet or griddle over medium heat for about 4 minutes. Brush bottom with oil. Use 1/4 cup of batter per pancake and pour onto skillet. Cook about 2 minutes or until bottom is light golden brown. Carefully flip; continue cooking about 1-1/2 minutes or until lightly browned. Serve with pure maple syrup.
Add 1 teaspoon vanilla extract to batter.
Make bear pancakes using a 3-1/2-inch round cutter for face and 2-inch cutter for ears (cut in half). Decorate face with banana slice and chocolate chips.
Use buttermilk for milk and vinegar.
Experiment with a mix of flour types, including oat flour, rice flour, and almond meal.
