Chipotle Cheddar Grilled Cheese on Sourdough

Makes:   2 sandwiches

Instructions
  1. SPREAD chipotle pepper with sauce over two bread slices; top evenly with cheese and remaining bread.
  2. SPREAD outsides of sandwiches with butter.
  3. COOK in skillet over medium heat 2 to 3 minutes; flip and continue cooking 2 minutes or until light golden brown on both sides.

NOTE

Canned chipotle pepper can be found in most grocery stores. It is dried, smoked jalapeño pepper, and the adobo sauce is a tangy red sauce. You can use just the chiles for intense smoky chile heat, or just the sauce if you want a sour-sweet flavor and slightly less fiery smoky heat.  I freeze leftovers and use in dips, pasta, marinades, soups, etc.
