Fresh Lemon-Chick Pea Salad
Vegetarian, Vegan, Wheat Free, Gluten Free, Dairy Free, Soy Free, Nut Free
  1. REMOVE 2 teaspoons zest and 1 tablespoon juice from lemon. Place in medium bowl with olive oil, garlic, salt and pepper; whisk until blended.
  2. STIR in remaining ingredients. Season with additional salt and pepper, if desired.
  3. REFRIGERATE until ready to serve.
