Kohlrabi is a sputnik-shaped vegetable that comes in a beautiful purple or green, and can be eaten raw or cooked. As a member of the cabbage family, Kohlrabi has a creamy white interior and a crisp texture that tastes slightly peppery and a little like radishes. The good news is Kohlrabi is a good source of thiamin, folate, magnesium, phosphorus, and a very good source of fiber, Vitamin C, Vitamin B6, copper and potassium.  Try some today!

Carrot-Kohlrabi Slaw

Instructions
  1. PLACE carrots, kohlrabi, cabbage, onion and cilantro in large bowl.
  2. WHISK remaining ingredients in medium bowl. Pour over vegetables; toss well.
  3. SERVE immediately or hold refrigerated for 1 to 2 days.
