Brussels Sprouts with Cranberries & Pecans

Who doesn’t love Brussels sprouts? Well, I can actually think of some people, but they may remember Grandma’s overcooked Sunday special that filled the house with a lingering pungent “aroma”. This recipe uses fresh Brussels sprouts blended perfectly with a lemon-Dijon dressing, chewy cranberries, crunchy pecans and savory Parmesan cheese.

  1. PLACE Brussels sprouts, cranberries and pecans in large bowl.
  2. MIX the olive oil, lemon juice, mustard, salt and pepper in medium bowl or shaker container.
  3. POUR dressing over Brussels sprouts, cranberries and pecans; toss to blend. Sprinkle with Parmesan cheese; toss lightly. Season with additional salt and pepper, if desired.
