  1. HEAT oil in medium non-stick skillet over medium-high heat. Add pepper and onion; cook 2 to 3 minutes or until tender, stirring occasionally. Remove to small bowl. Add eggs to skillet; reduce heat to medium. Season with salt and pepper; stir occasionally until eggs are nearly set. Remove skillet from heat.
  2. PLACE tortilla on cutting board. Spoon eggs down center to within 2 inches of edges. Cover with vegetables, cheese and avocado. Fold two opposite sides tightly into center over egg mixture. Tuck remaining short ends over center and carefully flip burrito over.
  3. WIPE skillet clean. Coat with cooking spray or brush with small amount of additional oil; heat over medium-high heat for several minutes. Carefully transfer burrito, seam side down, into heated skillet. Cook about 2 minutes on each side or until light golden brown. Serve with salsa.
Fresh Tips

EXTRAS
Spice it up with a dash of crushed red pepper flakes when cooking the eggs.

Add chopped cilantro before folding burrito.
