  1. HEAT oven to 400ºF.
  2. MIX chicken and barbecue sauce in medium bowl. Mix cheeses in small bowl.
  3. PLACE muffin halves on baking sheet. Top with chicken mixture, onion and cheese.
  4. BAKE 12 to 14 minutes or until cheese is melted and lightly browned. Sprinkle with parsley.

Use leftover chicken or store-bought rotisserie chicken.

These freeze well, so prepare two batches. Bake one for today and freeze one without baking. Wrap tightly, label with baking directions, and freeze. Thaw overnight in the refrigerator the night before baking.
