Barley Salad with Orange Vinaigrette

Barley offers a chewy, nutty texture, and is a good source of protein, magnesium, iron, Vitamin B-6 and calcium. When combined with the orange, strawberries, greens, and almonds, this salad is a powerhouse of nutrition and flavor!

Barley Salad with Orange Vinaigrette
Vegetarian, Wheat Free, Dairy Free, Soy Free
Makes:   about 4-1/2 cups

Instructions
  1. COOK barley according to package directions; cool.
  2. MEANWHILE, zest 2 teaspoons of orange peel and place in large bowl. Section orange and add to bowl. (See my How To video on cutting oranges.) Add remaining salad ingredients to bowl.
  3. MIX Orange Vinaigrette ingredients. Pour over salad; toss well to coat.
Fresh Tips

NOTE
I used Bob's Red Mill hull-less barley, which has a beautiful golden color. Pearl barley can work, too.

SUBSTITUTE
Prepare using quinoa.
