Asparagus cultivation began in Egypt more than 2000 years ago for medicinal purposes. It’s name was derived from the Persian term “asparag” meaning “shoot”. An asparagus-based aphrodisiac from the same area was discovered in a 16th century love manual. Asparagus came to the America with the pilgrims, and today California is the largest producer in the US. Asparagus is one of the most nutritionally-balanced plant foods, offering a wealth of health benefits.

Asparagus & Egg with Mustard Vinaigrette
Vegetarian, Wheat Free, Gluten Free, Dairy Free, Soy Free, Nut Free
Instructions
  1. STEAM asparagus until tender. (See How-to video.)
  2. PLACE olive oil, vinegar, mustard, capers and seasoning in medium container; cover and shake to blend. Add eggs and parsley; stir gently to coat.
  3. PLACE asparagus on platter or in serving dish; top with egg mixture.
